Lemon Yogurt Blackberry Popsicles
Lemon was my absolute favorite yogurt flavor when I was little and what better way to enjoy it than in popsicle form with some sweet berries.
Duffy LOVES yogurt - the second the container pops open he is in the kitchen sitting his best sit asking for his serving. As an added bonus we finished off the yogurt with this recipe and he was able to lick the plastic container with the same enthusiasm I have when finishing off a brownie batter spatula :)
To Make Lemon Yogurt Popsicles
- 1 cup plain greek yogurt
- Lemon Syrup, divided (recipe below)
- 1/4 cup blackberries, frozen are fine
To Make Lemon Syrup
- 1/2 cup water
- 2 teaspoons lemon zest (one lemon)
- 3 tablespoons lemon juice
- 3 tablespoons cane sugar
Lemon Syrup - Combine water, lemon zest, lemon juice, and cane sugar. Warm until sugar is disloved - a quick 30 seconds in the microwave does the trick.
Lemon Yogurt Popsicles - In a medium bowl, mix yogurt and lemon syrup (reserving 1 tablespoon of syrup for the blackberries). In a separate glass measuring cup, warm blackberries with the reserved lemon syrup (about 20 seconds in the mircowave) and lightly mash the blackberries and syrup with a fork leaving some berries almost whole.
Pour the Lemon Yogurt into popsicle molds leaving about a half inch at the top. Spoon in small amounts of the blackberries on top of the lemon yogurt popsicles. To marble the blackberry mixture into the lemon yogurt pops - use a kitchen knife to gently push the blackberry mixture down into the popsicle mold.
Freeze popsicles. I add the popsicle sticks after 40 minutes then continue freezing until frozen (about a total of 4 hours).
