Quick Chips and Guac
Simple Fresh Guacamole -
Yes!!!
It’s hard to beat a quick fresh guacamole. That's why I'm featuring this recipe to kick off my new beach shack food blog - Sea Salt & Tequila. This project has been a long while in the making and I am so incredibly happy I can share it with you - Enjoy!!
I can't tell you how many times I have made this easy crowd-pleaser... seriously. It was a major hit at a New Year's Eve party many years ago and is still one of my go-to appetizers when I have a dinner party or out of town visitors - perfect for snacking while we chat and I shake up some margaritas.
I never measure for this recipe – just add, mash, taste, adjust. It’s guac – and it is going to be great! Just go easy on the salt and jalapeno until you have tasted it – you can always add more of both – but it is hard to save it if you add too much without tasting as you go.
To Make the Guacamole
- 2 to 3 large ripe avocados*
- juice of one small lime
- 1/4 of a small red onion - diced fine
- a few handfuls of chopped cilantro (about 1/3 cup) - chopped
- 1/4 of a jalapeno (about 1 teaspoon) - diced super fine (remove seeds for less heat)
- sea salt - start with just a pinch
Guacamole - Combine, Mash, Taste, Adjust. Serve with lots of salty corn chips and a margarita, of course!
*Avocado Trick
I used to squeeze my avocado looking for a little give to know if it's ready – my mother has the perfect trick – try to lightly push off the stem. If it pops off and releases easily the avocado is ready to eat. Enjoy!
