Mango Lassi Popsicles

Cardamom spice gives these popsicles a slightly warm flavor

Mango Lassi is a delightfully refreshing drink, and I wanted to see if I could capture similar flavors in a summer popsicle.  You can absolutely pour each layer and freeze individually to achieve a more uniform striped look, but I think the marbling in these popsicles is beautiful. This yields a little sweet yogurt and spiced mango in each bite.

To Make Mango Lassi Popsicles*

  • 2/3 cup plain Greek yogurt
  • 1 1/2 cup mango pieces - I used frozen (once defrosted and pureed this should be about 2/3 of a cup)
  • 1/2 cup cardamom syrup, divided (recipe below)

To Make Cardamom Syrup

  • 1/2 cup water, warm
  • 3 tablespoons cane sugar
  • 1/4 teaspoon cardamom, plus more for dusting final popsicles

Cardamom Syrup - Dissolve the sugar in warm water and stir in cardamom.

Mango Lassi Popsicles - In a high speed blender puree defrosted mango and add three tablespoons of the cardamom syrup. In a separate bowl combine plain Greek yogurt and remaining cardamom syrup.  Gently spoon mixtures into popsicle molds* rotating between mango and yogurt layers. Place in freezer and add sticks about 45 minutes into the freezing process.  Freeze until frozen through (4+ hours).  To remove popsicles run mold under warm water for a few seconds.  Once popsicles are removed, dust lightly with additional cardamom for extra spice.

* I used larger 4 ounce popsicle molds - makes 4 popsicles
